Cocoa
Our cocoa division started with humble beginnings in 2003 of 100kg orders of cocoa powder, which has now grown to over 5000 MT annually of cocoa based ingredients such as cake, liquor, butter, powder and now chocolate. Our growth has been driven by our alignment with a high-quality powder processor in Spain; their wide range of powders has fast-tracked our growth in numerous different food processors with their own specialist needs. In most recent years we have strategically aligned ourselves with Spanish suppliers of liquor, butter and chocolate in order to widen our portfolio and meet the ever-increasing demand of our customers. We pride ourselves in the relationships we have created with our cocoa suppliers and it is these relationships that enable us to work efficiently, effectively and competitively.
Cocoa Powder
Cocoa powder is the powdered form of the dry cocoa solids with a small remaining amount of cocoa butter offering either reduced fat (10-12%) or high fat (20-22%) cocoa powder varieties. Cocoa Powders have broad uses across the food industry from simple colouring to adding exquisite aromas and flavours. We stock a wide range of colour variations to ensure we can provide our customers with the perfect cocoa powder for their application. We can also provide Rainforest Alliance Mass Balance Certified Cocoa on request.
Cocoa Butter
Cocoa butter is the edible fat extracted during the processing of cocoa beans. This is an essential ingredient in chocolate making, however, it can also be used in confectionery, desserts, and cosmetics. We want our customers to enjoy wider choices so we can offer cocoa butter in block and liquid format, with certifications such as Rainforest Alliance (UTZ) Mass Balance, or Organic.
Cocoa Liquor
Cocoa liquor is 100% cocoa mass available in solid or liquid form. It contains both cocoa solids and cocoa butter in roughly equal proportion and is produced from cocoa beans that have been dried, roasted, and separated from their skins. Cocoa liquor is a key ingredient in chocolate making, but can also be pressed to create cocoa cake (precursor to cocoa powder) and cocoa butter. Cocoa Cake
We can supply cocoa cake, both natural and alkalised, from various origins to suit the specific needs of our customers across the globe. Cocoa beans are cleaned, roasted, and milled to obtain a liquid slurry called cocoa liquor, which is the main ingredient for chocolate. The cocoa liquor is then hydraulically, or expeller pressed, which results in two components: cocoa butter and cocoa cake. The cocoa cake can then be further processed into a multitude of cocoa powder varieties such as natural, alkalised, or high-fat.
Cocoa Fibre
Cocoa fibre is made from a specially selected cocoa shell which is then ground into a fine, medium brown coloured powder with typical cocoa aromas with a roasted flavour. Cocoa fibre has 59% fibre content and can be used in a variety of applications to increase the fibre and nutritional profile of finished goods.
Cocoa fibre can be used in cakes, cereal bars, ice cream, spreads, biscuits, sauces, and more.
